Food: Amazing PB Balls

When we were in Johannesburg, we went to the Saxon Hotel spa for a much needed massage. The massages were pretty incredible but we were truly enamored with the peanut butter balls they offered as a healthy snack. Kim and I pretty much ate/stole (ahem) every peanut ball they put on the table! We were hooked! I asked as nicely as I could for this amazing recipe and they were kind enough to share. I had to do some fancy foot work to calibrate the measurements because everything was in metric! This is what I came up with and they are AMAZING!! 


Peanut Butter Balls ala Saxon Hotel:

2/3 cup shredded coconut
1 1/4 cups rolled oats
2 1/4 cup peanut butter
1/2 cup sunflower seeds
1/2 dried cranberries 
1/2 cup honey 
Place everything in a mixing bowl and mix until combined. Roll into 1 inch balls and store in the refrigerator. 
These are healthy and delicious!! The perfect mid-day pick me up!!
